Sweet Potato Chicken Hash Recipe

Taking an approach to eating a heart healthy diet isn’t always easy, that’s why we’re going to help you along the way. One of the most popular diets when it comes to heart health is the DASH diet (The what diet?) The DASH diet stands for Dietary Approaches to Stopping Hypertension. Hypertension means high blood pressure and is one of the leading causes of heart disease in America. With the DASH diet, we want to work on not taking in so much sodium or salt. While you may be worrying about how your food will taste while limiting salt, I assure you there are plenty of ways to have tasty food while still watching how much salt you consume. One recipe that is simple and delicious is a Chicken and sweet potato hash. This recipe is low in fat and all the ingredients are low in salt.

Chicken and Sweet Potato Hash

  • Chicken breast 6 ounces
  • Sweet Potato ½ cup
  • Apple ½ cup
  • Cinnamon – to taste

Take a medium sweet potato and dice it (about ½ cups worth); put the sweet potatoes in a pan with a tablespoon of olive oil and allow to cook. While the sweet potatoes are cooking the chicken breast will be prepped: take a chicken breast (roughly 6 ounces) and dice it. Once the sweet potatoes are starting to get lightly browned, add the chicken breast to a pan with a tablespoon of olive oil and allow it cook fully. While the chicken and sweet potatoes are cooking keep a cover over it. To finish the dish, take an apple and dice it (about a ½ cups worth) and add it to the pan. Do not cook the apples too long or they may turn to mush. Lastly, you may want to add some cinnamon. This is one serving, but you can make an even bigger batch to store in the fridge to use through the week.
